Grilled Summer Recipe: Cedar Plank Salmon with Grilled Asparagus

Ingredients:

  • 1 Cedar plank
  • 1 Bunch of asparagus (ends chopped off)
  • 2 Tbsp Extra Virgin Olive Oil
  • Garlic Powder, Sea Salt & Black Pepper (to taste)
  • 12 oz Salmon (2 6-oz filets) 
  • 2-3 Tbsp low-fat mayonnaise, spicy mayo, or vegennaise)
  • 3 Lemons (2 juiced, 1 sliced)
  • 2 Tbsp capers

Directions:

  1. Soak cedar plank in water for at least 1 hour prior to cooking for safety. After soaked, place salmon filets on planks. Preheat grill to high heat.
  2. Toss asparagus with olive oil, garlic powder, pepper, and salt and place on the grill for 3 minutes until tender, and set aside. Reduce heat on grill to medium.
  3. Squeeze juice of 1-2 lemons over salmon filets. Spread low-fat mayonnaise (or Vegenaisse) over filets and sprinkle with salmon seasoning (e.g. Chef Paul’s Magic Salmon Seasoning). 
  4. Place lemon slices on the top of salmon. Top with capers and another squeeze of lemon. 
  5. Place salmon plank on grill, cover, and let cook for 30-35 minutes. 
  6. Squeeze more lemon over salmon, serve with asparagus and enjoy!
